Fruit Pizza

I needed a summer dessert to take to a family event and I decided to make fruit pizza.  It’s fresh and light and entirely TOO delicious!
Crust:
1 cup butter
1 1/2 cups packed brown sugar
1 egg
2 1/4 cups flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt

Cream together butter and brown sugar.  Add egg.  Add remaining dry ingredients.  Don’t overmix.  Roll out onto prepared pizza pan.  (I love my pampered chef pizza stone.  I use it to bake all my cookies).  Bake at 350 for 15-20 minutes, until lightly browned.  Let cool.

Topping:
1 pkg. cream cheese, softened
1 cup powdered sugar
8 oz. container of Cool Whip

Blend the cream cheese and powdered sugar until creamy.  Add in cool whip.  Mix.  Spread on cooled crust.  Top with fresh fruit and berries.

Great recipe! I'm on a diet right now on which I can't eat fruit, but I may have to splurge once this summer.

I have a question for you. You mentioned baking cookies on your Pampered Chef pizza stone. I have one too, but it has been years since I've baked on it and unfortunately I no longer have the instructions. So do you have to adjust the oven temp. and/or baking time when using the stone? Also, if I remember correctly, you're not supposed to wash the stones with soap, correct? I hope you don't mind me asking these questions. You seem to be an expert on such things. =O)

It is my b-day this week! I am making this instead of cake.
